Omelette with milk and egg in the oven. Omelet like in kindergarten: how to cook the same one at home

For some reason, I remember the omelette from kindergarten - tall, elastic, juicy, with a delicate crust, fragrant and rosy. No matter how much we cook, no matter what recipes we take as a basis, an omelette in the oven turns out best.

Before you cook an omelette in the oven, you must remember: you must strictly follow the proportions indicated in the recipe, open the oven only after the cooking process is complete, otherwise the fluffiness will disappear and you will get a thin flatbread. The ideal temperature for cooking is 190-200 degrees.

Baking time depends on the volume, on average 25-30 minutes.
Some cooks (and sometimes professional chefs) advise adding soda and flour. They're lying. Shameless. No soda, no flour! The main thing here is the ratio of milk and eggs. If for a serving of a regular omelette, which is cooked in a frying pan, a couple of eggs and two tablespoons of milk are enough, then in order to prepare a fluffy omelette in the oven, you will need much more milk. And you don't need to beat them until foamy. in kindergartens? Mix milk and eggs thoroughly. Just imagine: two hundred eggs and 10 liters of milk. And all this is whipped with a mixer? No. Mix thoroughly. Believe me, your omelette in the oven will not suffer from this. And there... See for yourself.
To prepare six servings, take 10 large eggs, 330 ml of milk, salt (1 teaspoon), 70 g of butter (butter).

Turn on the oven (let it warm up for now). Grease a frying pan (or pre-prepared molds) with oil. Pour the milk into a deep bowl. Add salt and eggs. Stir thoroughly. Pour this mixture into a mold and place it in a preheated oven. Baking time - 30 minutes exactly. The omelette, cut into portions, is greased with oil and sprinkled with chopped parsley (this is not an acquired taste).

Now for some little tricks. To make an omelette in the oven successful, the form should be filled no more than 1/3 full. Fairy tales that when baking the volume increases several times are very far from reality. It's really increasing. But very little. The omelette in the dining room was high for one simple reason: there were a lot of people, but there were few “moulds”. And they use large baking trays there. After all, these are not several servings for a family. There are at least 200 people in the dining room, and it is cooked on 5-7 baking sheets, so it was filled, as they say, “to capacity,” more, and therefore higher.

The omelette always falls off. And this doesn't mean you did anything wrong. The temperature in the oven is not uniform. At the door, for example, it is always lower. Even if your oven is super-modern, has a fan and a special internal coating, the edges are always fried first, and only then the middle, which falls off. By the way, the omelet in the dining room also falls off. It’s just that masterful chefs manage to cut it in such a way that it’s not noticeable to the average person.

Stories that a real omelet turns out high and never sinks are not true. Need good volume? Choose a shape that is narrower and has high sides. And keep the proportions and

Omelette in the oven belongs to the category of dietary dishes that are allowed for frequent consumption. It's really both tasty and healthy. And various additives and options will help you diversify your menu. I recommend trying greens, an omelette with cheese and butter, an omelette with tomatoes and chopped. Ideally, you need to add ingredients that are not included in the main composition after cooking, otherwise the omelette will definitely settle. For example, coarsely grated cheese is sprinkled on top of a still hot omelette. It is advisable to serve vegetables as a side dish.

Bon appetit!

Omelet is a dish that will appeal to lovers of tasty and satisfying food, dieters and children. You just have to cook it not in a frying pan, but simply bake it in the oven. This method of heat treatment will help preserve more vitamins and prepare a fluffy and tender omelette, without the use of complex kitchen equipment.

The classic recipe for a fluffy omelette in the oven is prepared with just three ingredients (eggs, liquid and spices). Cow's milk is most often used as a liquid, but if you want to add nutrition to the dish, you can use sour cream or cream.

In order for the omelette to turn out great, it is important to strictly maintain the proportions of the ratio of liquid and eggs; for the classic recipe they will be as follows:

  • 5 chicken eggs;
  • 100 ml milk (cream or sour cream);
  • salt and spices to taste.

How to cook:

  1. Beat the eggs with a few sweeping movements of a whisk or a regular table fork. At the same stage, you can add salt and spices, or you can do this a little later.
  2. If salt and spices were not introduced into the mixture earlier, then mix them with milk and pour into the beaten eggs, stirring thoroughly.
  3. Pour the egg-milk mixture into a greased baking dish. It is worth considering the fact that during baking the mass will almost double, so fill the mold to a maximum of ½.
  4. The omelette should spend about 25 minutes in the oven. The most optimal and comfortable cooking temperature will be in the range from 160 to 200 degrees, depending on the specific oven.

A dish like in kindergarten?

To bake an omelette in the oven like in kindergarten, you will need the same ingredients as in the classic recipe, plus a piece of soft butter. You can make the dish more delicate with a pronounced creamy taste and aroma by replacing regular milk with baked milk, then everyone in the family will come running to its aroma.

Necessary products and their ratio:

  • 6 chicken eggs (select or first category);
  • 300 ml baked or regular cow's milk;
  • 3-4 g table salt;
  • 20 g butter of creamy consistency.

Step-by-step algorithm of actions:

  1. Beat the eggs into a suitable sized bowl, add a little salt and beat with a fork. There is no need to beat them. The main goal is to obtain a uniform texture, and not a fluffy foamy mass.
  2. Pour milk into the eggs and stir again until a homogeneous mixture is obtained, which is poured into a refractory baking dish. The narrower the shape and the higher its sides, the more magnificent the result.
  3. Place the omelette in the oven for 30-35 minutes at a temperature of approximately 200 degrees. During this time, the oven door must not be opened.
  4. After the specified time has passed, very carefully and with utmost care so that the dish does not fall off, grease the surface of the omelette with butter and return it to the oven. This procedure will help it become beautifully browned on top and covered with a caramel crust.

Lush omelette baked in the oven

You can achieve a fluffy omelette baked in the oven by following a few simple rules. First, there is no need to add additional ingredients to the mixture, such as flour, starch, soda or baking powder, which will only spoil the delicate taste of the dish. The second rule: never, under any circumstances, open the oven before the end of baking, so that the omelet does not fall off and turn into scrambled eggs from the oven.

In order to prepare the simplest and most dietary variation of this sumptuous dish you will need:

  • 4 chicken eggs;
  • 75 ml boiled or filtered water;
  • 15 g butter;
  • salt to taste.

Work progress:

  1. Using a fork, lightly swirl the water, eggs and salt into a homogeneous mixture.
  2. Grease the form for the future omelet with oil to make the finished casserole easier to remove. Use a cube of soft butter to go along the bottom and walls.
  3. Pour the omelette mixture into the prepared pan and place in the oven. The baking time will directly depend on the diameter of the mold and the thickness of the egg pancake. It can be from 15 minutes. The temperature must be set based on a specific oven. It can be from 150 to 200 degrees in different cases; A little trick will help to help the omelette bake well and evenly both around the edges and in the middle. Before putting the pan in the oven, you need to cover it with a piece of parchment, which should be removed only after the contents of the pan have cooled slightly after baking.
  4. Fresh vegetables and a slice of bran or whole grain bread will perfectly complement the finished egg casserole for those who are trying to get rid of extra pounds.

French style with cheese

The French omelet turns out to be very aromatic. Its taste may differ radically depending on the type of cheese chosen, but it is still better to give preference to non-refractory varieties so that the finished dish has a delicate structure, close to the structure of a soufflé.

Required Products:

  • 5 chicken eggs;
  • 150 g hard cheese;
  • 10 g butter;
  • salt, pepper and herbs as desired.

How to cook an omelette in the oven:

  1. The cheese needs to be turned into small shavings so that it is evenly distributed in the egg mixture and does not concentrate on the bottom of the pan.
  2. Beat the eggs with a fork until smooth, add cheese shavings, some of which can be left for a thicker cheese crust. Salt, spices and herbs are added to the mixture as desired. It often happens that the cheese taste already contains everything you need.
  3. Grease the mold with oil and pour the egg-cheese mixture into it. Then bake in a preheated oven.
  4. 10 minutes before the end of the cooking process, you can sprinkle the remaining cheese shavings on top of the omelette and brown it.

Diet omelette with broccoli or cauliflower

Adherents of a healthy diet know how many beneficial substances are concentrated in vegetables such as broccoli or cauliflower, so it is not surprising that a delicious omelet recipe has appeared that includes them.

To prepare an omelet with cauliflower and/or broccoli you need:

  • 4 chicken eggs;
  • 200 ml cream (fat content 10-15%);
  • 150 g broccoli (cauliflower);
  • 50 g cheese;
  • 15-20 ml olive oil;
  • salt and other spices to taste.

Method for preparing a diet omelette in the oven:

  1. Fresh or frozen cauliflower should be boiled for about five minutes in boiling salted water. Then drain in a colander.
  2. After the water has drained from the cabbage, separate it into smaller florets and fry in a frying pan with a thick bottom and high sides in a small amount of olive oil. Since this pan will then move into the oven, it will be better if its handle is removable.
  3. Lightly beat the cream together with the eggs and cheese shavings. Pour the resulting mixture over the cauliflower in the pan.
  4. Next, you can cook the omelette on the stove with a lid, baking after only 5-10 minutes under the grill for a golden brown crust, or you can immediately put it in the oven for the entire cooking time.
  5. An omelette with broccoli in the oven is prepared in the same way; moreover, these vegetables can be used at the same time. The main thing is that their total weight is equal to the prescription value.

What you will need for the omelette dessert:

  • 2 chicken eggs;
  • 75 g sour cream;
  • 200 g bananas;
  • 100 g sugar;
  • 20 g butter;
  • 50 g oat bran;
  • 3-4 g nutmeg;
  • cinnamon to taste.

Cooking process step by step:

  1. Bananas, it is better to choose fruits with dense pulp, cut into small cubes.
  2. Melt butter and sugar in a dry, thick-bottomed frying pan. When the mixture becomes homogeneous, add bananas to it, sprinkle with cinnamon and caramelize for about 5 minutes, stirring constantly.
  3. Beat eggs with sour cream, nutmeg and bran. Then add the caramelized bananas and beat everything again.
  4. Fill portion forms (those used for making soufflés) 1/3 full with the resulting mixture and bake at 180 degrees for about a quarter of an hour;
  5. The finished dessert can be topped with chocolate glaze or decorated with slices of ripe banana.

Omelet with ham, tomatoes and cheese, baked in a pot

For serving in portions, the baked omelette is cut into separate pieces, but you can do it a little differently - cook it in clay baking pots. And if you add ham, cheese and tomatoes to the traditional list of ingredients, you get a fairly economical but satisfying dish.

Proportions of products used in the cooking process:

  • 3 chicken eggs;
  • 50 ml milk;
  • 150 g ham;
  • 150 g fresh tomatoes;
  • 150 g onions;
  • 50 g hard cheese;
  • 20 g butter (can be replaced with vegetable oil);
  • salt and spices to taste.

Procedure:

  1. First fry the diced onions in butter or vegetable oil, then add the ham chopped into the same cubes. Fry everything together for a few minutes.
  2. Remove the skins from the tomatoes, blanch them in boiling water, and cut them into small cubes again. Then mix them with ham and onions, but do not heat them.
  3. Distribute the resulting mixture into baking pots. Pour a mixture of eggs beaten with milk, cheese and spices on top. You don’t have to mix the cheese with the rest of the ingredients, but leave it for sprinkling on top of the omelet and creating a crust. For all omelettes with additional ingredients (bananas, broccoli, ham and others), there is one rule: in order not to damage the structure and not spoil the splendor of the casserole, these products are introduced last.
  4. Pots filled no more than half should be kept in the oven for 25 minutes at 180 degrees. After this, the omelette with ham, tomatoes and cheese will be ready.

If you are tired of the usual one, then, without making much effort, you can prepare an equally delicious breakfast - an omelet. To diversify the taste of a dish, cooks add a wide variety of products to the egg mixture, both meat and vegetables, as well as cheeses and even fruits and nuts, thus increasing the nutritional value, filling it with vitamins and creating more and more new tastes of such a familiar dish.

To give the omelette a fluffiness that cannot be achieved when cooking in a frying pan, it is prepared in the oven, usually baking for thirty to forty minutes at a temperature of 200 degrees. The taste of this dish is simply incomparable. Yes, you probably remember those lush omelettes that we were served in kindergarten or at school. The chefs prepared them in exactly this way, thereby surprising each time with the splendor of the dish.

Today we will tell you in detail how to cook a fluffy omelette in the oven.

Cooking a delicious omelet in the oven

Ingredients:

  • eggs – 6 pcs.;
  • milk (3.2% fat) – 300 ml;
  • butter – 50 g;
  • salt – 0.5 teaspoon.

Preparation

Beat the eggs into a deep bowl of a suitable size, add milk, salt, and mix with a fork or whisk until smooth, but do not beat. Pour the egg mixture into a mold coated with butter, about twenty centimeters in diameter, and cook in an oven preheated to 200 degrees for about forty minutes. A nice light brown crust should form on top. If desired, seven minutes before the end of cooking, you can sprinkle the dish with hard cheese grated.

Serve a delicious, fluffy omelette, cooked in the oven warm, cut into portions and put a piece of butter on top.

Omelette with vegetables and cheese in the oven

Ingredients:

  • large eggs – 5 pcs.;
  • – 50 ml;
  • small young zucchini - 1 pc.;
  • small carrots – 1 pc.;
  • bell pepper, preferably red – 1 pc.;
  • medium tomato – 2 pcs.;
  • green onion feathers - 2 pcs.;
  • parsley – 5 sprigs;
  • hard spicy cheese – 60 g;
  • oil, refined - 3 tbsp. spoons;
  • ground paprika - to taste;
  • freshly ground black or white pepper - to taste;
  • salt - to taste;
  • water – 50 ml.

Preparation

Cut the washed and peeled carrots into cubes and fry in a frying pan with vegetable oil for three minutes. Then add peeled and diced zucchini, sweet bell pepper, green onions, add water and simmer for seven minutes, stirring occasionally.

Beat the eggs with sour cream until fluffy, add grated hard cheese, salt, ground pepper, paprika, chopped parsley, add cooled, steamed vegetables and mix gently.

Pour the egg-vegetable mixture into a greased form, distribute the tomatoes cut into circles, about five millimeters thick, on top and cook in an oven preheated to 200 degrees for about twenty-five to thirty minutes.

After the time has passed, take the finished omelette with vegetables out of the oven, cut into portions of the desired shape and serve.

When preparing such a dish, you can change the vegetable filling as you wish. You can also add pre-boiled cabbage, cauliflower, broccoli or eggplant to the egg mixture, which can be put instead of zucchini. An excellent component that gives a special taste to the omelette will be mushrooms or green peas almost cooked through cooking. Sour cream can be replaced with yogurt, kefir or milk, and fresh basil or dill can be added to the parsley. The set of spices is also not important; you can put any others to your liking. Use your imagination and experiment. In any case, the result will certainly please you.

Options for preparing egg dishes

We are all accustomed to the fact that an omelet is an excellent option for a quick breakfast or light dinner. It is not difficult to prepare such a dish. The simplest products and very little time are required. Usually the omelette is fried in a frying pan for 10-15 minutes under a closed lid. It turns out quite tasty, but there is one unpleasant moment. During the frying process, the mixture in the pan gradually rises, and at the very end it sharply settles. This does not spoil the taste of the dish, but the appearance is not at all the same. However, there is a way that allows you to change everything. You just need to transfer the cooking process from the stove to the oven. It maintains an equally high temperature on all sides, and the product does not settle even after cooling.

Baking in the oven

To make an omelette in the oven, you will need the following set of ingredients: 4 eggs, a pinch of salt, 200 grams of milk and a piece of butter (for greasing the pan).

Prepare an omelet in the oven as follows:

  1. Break all the eggs one by one into a deep bowl, add salt and beat well. But don’t be overzealous and turn the mixture into thick foam.
  2. Pour in the milk and shake the resulting mixture thoroughly.
  3. Grease a baking pan with butter.
  4. Pour the egg mixture into the mold and place in the oven, preheated to 200 degrees.
  5. The baking process will take no more than 30 minutes. Readiness can be determined by the golden brown crust on the surface of the omelette. At this stage, you must follow one very important rule: under no circumstances should you open the cabinet door while the omelette is being prepared. This may cause the mixture to instantly collapse due to the temperature difference.
  6. There is no need to leave the finished omelette in the oven. This could harm him.
  7. Now the product needs to be greased with butter on top and carefully transferred to a dish. To do this, remove the hot pan from the oven, cover the top with a wide plate and turn it over sharply. An omelette prepared in this way in the oven turns out fluffy and very tender. It can be served immediately or allowed to cool slightly.

To make the dish airy

A lush omelette is obtained only if you strictly adhere to a certain ratio of ingredients (for 4 eggs - 200 ml of milk, and for 6 eggs - 300 ml). It is also necessary to take into account the fact that during the baking process the mixture first rises very much and then falls a little. Therefore, it is better to take a baking dish with a small diameter, but with high edges. Some housewives believe that additional components may disrupt the consistency of the finished product. You should not listen to such an opinion. You can bake an excellent fluffy omelette in the oven with the addition of meat products and herbs, as well as sour cream instead of milk. Products you will need: 4 raw eggs, 3 tablespoons of sour cream, salt, 3 sausages, fresh herbs and spices.

The dish is prepared approximately like this:

  1. Break the eggs one at a time into a clean bowl. Add sour cream, spices and salt, and then beat everything together until light foam appears on the surface.
  2. First boil the sausages and then cut them into slices (or small cubes).
  3. Add chopped meat products to the egg mixture.
  4. Pour the mixture into prepared forms, filling each of them only halfway. You can decorate the top with greenery.
  5. Place the molds in the oven, preheating it to 180 degrees.
  6. The baking process will take very little time. In just 25 minutes, the most delicate airy omelette will be ready.

Omelette for those with a sweet tooth

There are people who cannot imagine life without sweets. How to cook an omelet in the oven and please those sweet tooths? There is a fairly simple option that is not much different from the classic method. For this dish you will need the following products: a glass of milk, 5 eggs, a pinch of salt, 2 tablespoons of sugar, butter and raisins.

Cooking technology:

  1. In a deep container, combine eggs, sugar, milk and salt.
  2. Using a mixer, beat the products for 2 minutes until a stable foam forms.
  3. Grease the mold with melted butter and pour raisins into the bottom.
  4. Pour the egg mixture on top and immediately place it in the oven.
  5. The product is baked at 160 degrees for 30 minutes. The delicate sweet dish can be topped with sour cream or yogurt, and sprinkled with fresh berries or pieces of fruit. Those with a sweet tooth will simply be delighted with this deliciousness.

Learning to cook a fluffy omelette is a dream for novice housewives. Having gone through a series of futile attempts to find the secret to the splendor of an ordinary fried omelette, you have probably already become convinced that no matter how much you guard it under the lid, you will still serve on the table not romantic egg-milk clouds, but a trivial pancake, even if it is quite edible. Culinary wisdom says that it is much easier to cook a fluffy omelette in the oven; a recipe with a photo will give you a guaranteed result. So if you have never managed to cook a fluffy omelette, today you will definitely cope with this task with an “A”. And, importantly, you don’t have to learn any special tricks. The fluffiness of an omelette depends not on how high it rises, but on how high you fill the baking dish. If the layer of omelette mass turns out to be 6-7 centimeters thick, then the finished omelette will have exactly the same height. To prevent the omelette from falling apart, add a little flour to it. It doesn’t taste at all, but it perfectly retains the shape of the omelette, making its structure stable, but not rubbery. So your omelet will remain tender if you create the correct ratio of eggs and flour - a quarter spoon of flour per egg. The omelet recipe that we bring to your attention today is a culinary classic, no flavoring additives or frills. But believe me, even with three percent milk the omelette acquires a creamy texture. If you want special tenderness and additional satiety, you can replace the milk with 10 percent cream, or make a combination - a quarter glass of milk and 3 tablespoons of sour cream. Also, if desired, you can add finely grated cheese to the omelette - 80-100 grams for the amount of ingredients indicated below. The omelet can be made with vegetables, mushrooms or meat. To do this, you will first need to prepare all the filling - chop and fry vegetables, mushrooms or pieces of meat or chicken (ham can be put in an omelette without frying), put it in a mold and then fill it with the omelette mass, which you will learn how to make right now.

Ingredients:

  • Eggs – 4 pieces,
  • Milk – ½ cup (150 ml),
  • Flour – 1 level tablespoon,
  • Salt - to taste

Products are given for a mold measuring 11 by 11 cm.
