I learned how to cook delicious Olivier from my mother-in-law and in this sense I got married successfully. On the other hand, it was her cuisine that played a certain role in the fact that now I can’t eat this “Olivier”, but I have to eat “diet Olivier”.
This salad, according to her recipe, is prepared in style: firstly, there is no pickled cucumber, and there is no cucumber at all. Secondly, there are no potatoes. Imagine a salad of good boiled sausage, eggs, peas, carrots and a small onion - of course it will turn out delicious.

I have to get out of it, so in my version, the Olivier diet salad looks like this: instead of sausage, boiled chicken, only egg white, preferably not canned peas, and instead of mayonnaise, a spoonful of low-fat sour cream.
It turns out, of course, only a pale shadow of the New Year's king of salads, but when you've been on a diet for a long time and the sensitivity of your taste buds becomes different. Personally, after oatmeal, crackers and unsweetened foods, I really like this dietary salad.


Ingredients for one serving:
- chicken fillet – 100 g,
- boiled egg white – 1 pc.,
- fresh or frozen peas – 2-3 tbsp. l.,
- small carrots – 1 pc.,
- low-fat sour cream – 1-2 tbsp. l.

How to cook at home




Boil chicken fillet in plenty of water. If you have homemade chicken, use the breast (homemade chicken will take longer to cook).
Hard boil the egg, peel and separate the white.
Boil or bake carrots in the oven.
Boil the peas just a little. Diet No. 5 excludes canned foods, so it’s better to take ice cream peas, but in principle, you can eat canned peas once.

Cut all prepared foods into small cubes.





For dressing, you can use not pure sour cream, but make a sauce from it. To do this, dry a small amount of flour in a clean frying pan until golden brown. Take a teaspoon of this flour, mix with three tablespoons of sour cream and heat in a small saucepan until the sauce thickens.

If our salad contains a minimum of potatoes, fat-free chicken (it needs to be cooked without the skin), and we do not season it with store-bought mayonnaise, but use low-fat yogurt, the calorie content of the holiday treat will be only 100 kcal per 100 g.

You can easily afford yourself a couple of spoons of your favorite treat on the occasion of the holiday!

Diet Olivier: recipe with celery

This version of your favorite salad contains a green apple. It will give our dish a mysterious piquancy. And to prevent the healthy fruit from darkening, you can keep it in fresh lemon juice for about 10 minutes.

Ingredients

  • Chicken breast – 200 g;
  • Celery – 2 small stalks, peeled;
  • Eggs – 3 pcs.;
  • Carrot – 1 pc.;
  • Apple – 1 pc.;
  • Green peas (canned) – 100-150 g;
  • Large pickled cucumber – 1 pc.;
  • Lemon – ½ piece;
  • Yogurt 0% fat – 200 g;
  • Salt and pepper - to taste.

How to make a diet Olivier salad with your own hands

We wash the carrots and put them in a saucepan along with the eggs, pour in enough water to cover everything, and put them on the fire.

How to cook food for salad

  • Vegetables must be cooked covered, this way they will retain more useful elements.
  • You can make carrots (potatoes) soft in a slow cooker. To do this, pour 2-3 glasses of water into the unit, put vegetables and eggs (everything needs to be washed thoroughly before doing this!) in a container for steaming, turn on the timer for 20 minutes, and start it. When the time is up, open the lid and let the food cool.
  • Vegetable ingredients and meat should be chopped when they are still warm. Thanks to this trick, the taste of the dish will be more intense.
  • We cook the chicken separately. You can throw a couple of black peppercorns and a small onion into the broth - this will make the liquid more aromatic (the soup on it will turn out wonderful!), and the meat will smell pleasantly of spices.

Assembling the salad

  1. We peel the vegetables and eggs, remove the core from the apple.
  2. We cut everything, including chicken and cucumber, into neat cubes and pour into a bowl.
  3. Add peas and brush with yogurt. All that remains is to add salt and, if desired, lightly pepper.

You shouldn’t take the salad to the table immediately after dressing - you need to let it brew for at least a quarter of an hour, without putting it in the refrigerator. Serve everyone's favorite treat, decorating it with fresh herb leaves on top. Basil, parsley or dill will do for this purpose.

Light diet Olivier without potatoes with chicken

When every calorie counts, you can use the most dietary recipe for your favorite salad. Without potatoes with fresh peas, seasoned with homemade sauce, it will amaze with its lightness and spring-like fresh taste.

Ingredients

  • Chicken breast meat – 150 g;
  • Eggs – 2 pcs.;
  • Boiled yolk – 1 pc.;
  • Peas (frozen product) – 150 g;
  • Onion – ½ piece;
  • Carrot – 1 pc.;
  • Sour cucumber (small) – 1 pc.;
  • Fresh gherkins – 2 pcs.;
  • Dill (greens) – 3-5 sprigs;
  • Cottage cheese in the form of paste – 2 tbsp;
  • Mustard – ½ tsp;
  • Low-fat kefir – 1-2 tsp;
  • Soy sauce – a few drops;
  • Salt.

How to make a light and tasty dietary Olivier salad

  1. After boiling the vegetables and eggs, peel them and chop them with a sharp knife, turning them into cubes. We also cut the breast and cucumbers. We're getting in the way.
  2. Defrost the peas in cold water, then drain it, dry the peas and place in a common salad bowl.
  3. Before putting chopped onions in a salad bowl, you need to pour boiling water over them - this will remove the unpleasant smell and excessive bitterness.
  4. To get the dressing, use a blender to mix cottage cheese and mustard, add kefir and sauce to these products. Add it to the salad and stir. If necessary, you can lightly add salt to it without being too zealous.

On portioned plates, garnished with fresh dill, your favorite salad will look very appetizing.

Homemade Olivier with turkey and zucchini: dietary recipe

During the vegetable-rich summer season, it would be a sin not to treat your family to a light and juicy salad. Men will be pleased with the meat, and women who are losing weight will be pleased with the low calorie content and delicate taste.

Ingredients

  • Boiled turkey (breast) – 200 g;
  • Fresh zucchini – 1 small fruit;
  • Carrot – 1 pc.;
  • Chicken eggs – 2 pcs.;
  • Peas (fresh or canned) – 200 g;
  • Onions (greens) – 1 bunch;
  • Low-fat sour cream – 150 g;
  • Mustard – ¼ tsp;
  • Salt.

How to quickly prepare dietary Olivier at home

You need to cook vegetables and eggs, as well as meat in advance. Then all that remains is to clean everything, chop finely, chop the onion and season with sour cream mixed with mustard. We add salt at the end.

It would seem that it is impossible to surprise someone with a light version of the famous salad. However, dietary Olivier is just as fertile ground for culinary fantasies as its more nutritious variety.
