Asian spring rolls are becoming very popular not only in their homeland. First, prepare the filling, as for regular stuffed pancakes. The breast must be twisted in a “large” meat grinder or chopped with a knife.

We cut the carrots into small strips or run them through a vegetable cutter.

Mix the main ingredients until the mixture is homogeneous.

Before use, funchoza is poured with boiling water for 2-3 minutes and then cut with scissors. Add the finished bean vermicelli to the minced meat and mix everything again.

Take the first leaf and place it on a flat dish filled with warm water.

To prevent the paper from curling, lower it to the bottom, holding it with your fingers. We do it very quickly, because after a few seconds the hard circle will transform into a soft and quite sticky pancake. We advise you to transfer the sheets of rice paper to the mat after 5 seconds in the water, before they are too soft - this will make stuffing easier.

We collect a small amount of filling into a long flat cutlet and place it at the very bottom of a rice sheet, placed after water on a bamboo mat.

We wrap it like cabbage rolls, but first we fold the circle together with the minced meat in half.

We choose the length of the roll as desired. The main thing is that the filling is well hidden inside.

Place the finished rolls on a special dish at a short distance from each other. Rice rolls tend to stick together.

Fry the spring rolls in heated sunflower oil on both sides for no more than 7 minutes. The rice paper will bubble slightly during cooking - this is normal. If desired, the rolls can be dusted with flour (for a crispier crust).

Remove the rolls from the pan and immediately bring them to the table before the crust becomes limp.

These rice pancakes stuffed with minced chicken and topped with spicy ginger sauce are simply irresistible.

1 pack of rice paper for spring rolls

1 chicken breast
1 clove of garlic
1 piece ginger or galangal root
1 carrot
1/2 head of Chinese cabbage
1 tbsp. oyster or
1 tbsp.
small bunch of cilantro, basil and green onions

0.5 l. vegetable oil for deep frying

Cut the chicken breast into small pieces the size of a pea or so, thinly slice the white part of the green onions, mince or grate the garlic and cabbage, and cut the carrots and cabbage (if you don't have Chinese, use regular cabbage) into thin strips.

In a wok or heavy frying pan that holds heat well, heat a little vegetable oil, add the garlic, ginger and onion, stir and immediately add the chicken breast. Fry, stirring continuously, for 1-2 minutes until the chicken is fully cooked, then pour in the oyster sauce, stir again and after a minute remove the wok from the heat.

Transfer the chicken to a separate container, heat it again, add vegetables, quickly fry, add soy sauce, stir and remove from heat. Like all manipulations with a wok in general, this should be done at maximum heat so that the meat is quickly fried and the vegetables retain their crispness. Combine vegetables and chicken, add chopped cilantro and, and mix thoroughly.

Dip the rice paper, one leaf at a time, into warm water for 15-20 seconds until it becomes soft, place it on a flat surface, place one tablespoon of filling on each sheet, and wrap it in a roll.

It is important that the paper is not torn and the roll is sealed, otherwise hot oil will get inside and steam will explode the spring roll from the inside. To do this, spread the filling compactly on the part of the “pancake” closest to you, retreating 3-4 centimeters from the edge, wrap it from the bottom, then cover the middle with the side parts, and roll it tightly into a roll.

Once you have done this with each roll, heat the oil in a wok and deep fry the spring rolls for a couple of minutes. Serve spring rolls sprinkled with thinly sliced green onions, with or sweet sauce.

First we prepare the meat filling for our appetizer. To do this, wash the chicken meat, cut it into pieces and grind it in a meat grinder along with onions.
