We form cutlets, beat them lightly in your hand to release the air, and place them in a frying pan with heated vegetable oil.

Fry on each side for 5 minutes over medium heat. Then reduce the heat, cover with a lid and bring to readiness.

- veal (pulp without bone) – 300 g;
- raw pumpkin – 200 g;
- onions – 1 pc.;
- salt - to taste;
- egg white – 1 pc.;
- bread – 1 slice;
- paprika, thyme or thyme, basil - half a teaspoon each;
- breadcrumbs or corn flour - 3 tbsp. spoons;
- refined vegetable oil – as much as needed for frying.

Let's prepare everything for the minced meat: peel the pumpkin, cut it into pieces (by the way, you can use frozen), cut the onion into quarters. Remove membranes from the meat and cut into medium-sized pieces.





We'll put everything through a meat grinder, alternating products to make it easier to push the minced meat through.





Beat the egg white with a fork until it forms a foam - this way it will mix faster with the crushed products.





Soak a slice of white bread in water, squeeze it out and pass it through a meat grinder after the meat. The bread will clean the screw and knife from any remaining minced meat, and will retain meat juice during frying. The cutlets will turn out tastier and juicier. Add the bread and whipped egg whites to the minced meat and mix.







Let's take non-spicy spices so as not to whet the appetite. Add ground paprika and thyme to the minced meat, add salt to taste and mix everything thoroughly. To get more viscous and homogeneous minced meat, it is recommended to beat the cutlet mass - place it in a bowl or on the table 15-20 times. After this, cover with film or cover with a lid and let stand for 5-10 minutes. These also turn out very tasty.
