One of the main components of the salad is herring. You can buy ready-made salted herring in the store or salt the fish yourself. When I have time, I prefer to salt the fish myself. But it also happens that suddenly I suddenly want a salad with herring, then I buy ready-made herring. Herring from large plastic buckets tastes best - you need to take a whole, uncut fish and larger in size.

So, I'm telling you the recipe.

  • 1 large salted herring;
  • 1 large boiled beet;
  • 3 potatoes;
  • mayonnaise for dressing.

That's the whole list of products! Beetroot and herring are just a classic flavor combination, add some potatoes for the mix and season with mayonnaise. Don't let the minimum number of products scare you - they combine perfectly with each other. Everyone will surely like the harmonious taste of this salad!

So, first you need to boil the vegetables in their peels until tender. Then cool the potatoes and beets, peel them, and cut them into small cubes. Place the chopped vegetables in a salad bowl.

Now it's the fish's turn. We need to cut the salted herring - first cut off the head and tail, then gut it, remove the skin, carefully picking it up by the edge with a knife. The last stage of cutting is to separate the fillet from the bones. Tweezers can be used to remove thin, long bones.

Cut the herring fillet into cubes and add to the salad bowl. Add a little mayonnaise and mix. Voila! A new delicious beet salad with herring is ready. You can call this dish a light alternative to Herring under a fur coat. Bon appetit!

Salad with herring, beets and potatoes, the recipe with photo of which I offer, is very popular in Scandinavian countries. It is somewhat similar in taste and composition to ours, but there are differences. Its peculiarity is that the herring added to the salad is strongly salted. It is salted, not lightly salted; it is not soaked in milk to soften the taste. The taste of the finished salad is balanced by potatoes and pickled onions, which need to be soaked in vinegar for 15-20 minutes.

Pay special attention to the choice of beets. It should be sweet and dark burgundy in color. It is better to steam it or bake it in foil in the oven - with this preparation, the beets will retain their color, taste and will not absorb water.

In the original recipe, the salad is dressed with sour cream. It can be mixed with ready-made mustard - sweet or spicy, add a little pepper or vinegar. In general, adjust the dressing to your taste. If mayonnaise is more familiar to you, make sour cream and mayonnaise sauce for salad.
Salad with herring, potatoes and beets can be served for dinner as a main course or as an appetizer for the holiday table. It is better to prepare it at least half an hour before serving, so that it has time to soak in the sauce.

Ingredients:

- salted herring – 1 fillet;
- boiled potatoes – 5 pcs;
- onion – 1 medium head;
- boiled beets – 2 pcs;
- sour cream – 150 ml;
- table mustard, spicy or sweet – 1 tsp;
- vinegar – 0.5 teaspoon (or lemon juice);
- ground black pepper - to taste;

For the marinade you will need:
- vinegar 9 or 6% – 1 tbsp. l;
- fine salt - a pinch;
- sugar - a third of a teaspoon.

To decorate the salad:

- diced onions – 0.5 pcs;
- egg yolk – 1 pc;
- green onions - a small bunch (or dill).

How to cook with photos step by step




Boil the potatoes as convenient: steamed, in their skins or in salted water, peeling them. Cook until done and cool. For any salad, it is better to steam beets without peeling them. Or wrap in two layers of foil and bake in the oven. Beets cooked in water lose most of their vitamins, and along with them their taste and color. Cool and peel the vegetables.





When the main products are ready, we begin slicing. Finely chop the onion. We prepare the marinade from table or apple cider vinegar, salt and sugar. Pour the marinade over the onions and leave for 15-20 minutes.




While the onions are pickling, chop the vegetables and herring. Let's start with potatoes. Cut the tubers into slices, then into medium-sized cubes, larger than for herring under a fur coat or vinaigrette.






Cut the herring into fillets. One fillet can be cut into thin strips, mixed with onion half rings, poured with vegetable oil and put in the refrigerator. Delicious with boiled potatoes! First cut the second into thin slices, then into cubes smaller than potatoes.




Cut the beets into slices, then into small pieces. The finer the beets are chopped, the more juice they will produce and the faster they will color the light ingredients.




Prepare salad dressing. Mix sour cream with mustard, ground pepper and vinegar or lemon juice. You can mix sour cream with mayonnaise or use only mayonnaise (preferably thick and homemade).







Mix herring, potatoes, beets. Add pickled onions along with the marinade. Add sauce and mix thoroughly.





Let the salad sit for a while in the refrigerator. 20 minutes will be enough, but it’s better to leave it longer to soak in the sauce.




You can serve the salad with herring, beets and potatoes in a large salad bowl or in portions, laid out in a mound. Decorate with grated egg yolk, finely chopped onions and green onions. Serve with rye bread. Bon appetit!

Salad with herring and beets, but not a fur coat! Do you know this recipe? I know. And, by the way, I make it much more often than making herring under a fur coat. Because it's simpler. In many times. Especially considering that in our stores boiled beets are cheaper than fresh ones (and are much more common), accordingly, I make this salad from boiled beets. In this case, I generally spend only 5 minutes preparing it. True, then you need to let it brew for another half an hour (better - even more).

If you have all the ingredients on hand, then this salad with herring and beets can be prepared in the morning and eaten at lunch or in the evening.

Please note that I do not have any salt in my ingredients. Herring salts it. And my herring is lightly salted. Accordingly, if your herring turns out to be more salty, then you will need... more beets. Well, or less herring for the same amount of beets. This needs to be taken into account. So be sure to try the salad with herring and beets as you prepare it, because one of its main ingredients is also its seasoning.

Finely chop the herring. Actually, the smaller the better. Especially if the herring is highly salted.

We combine all the ingredients. We add the herring not immediately, but in portions, so as not to over-salt the salad. Mix everything well, checking the level of salinity.

Let the salad with beets and herring brew for at least 30 minutes.

They eat it either just as a salad, or with potatoes, or... with lettuce. Yes, salad - with lettuce. If you have a chance, try it, it turns out really, really good.


Despite the simple ingredients, the salad with beets, herring and apple turns out to be piquant and very tasty. Sweet, salty and sour, combined together, make the dish unique. The unusual dressing in this salad plays an important role, so I advise you not to neglect it.

To prepare a salad with beets, herring and apples we will need:
200 g lightly salted herring;
2 medium beets;
1/2 apple (it is better to take apples of sweet and sour varieties, for example “seven”);
1/2 medium red onion.
For refueling:
70 g vegetable oil;
1 tbsp. l. mustard beans (can be replaced with 1/4 tsp regular mustard);
1 tbsp. l. lemon juice;
1 tsp. honey;
salt, pepper - to taste.

Cut the herring into fillets, removing all the seeds. Peel the apple and remove seeds. Also cut the herring fillet and apple into strips and add to the salad with the beets.

To prepare the dressing, combine vegetable oil, mustard, lemon juice, honey and mix thoroughly.

Chop the onion and add to the salad. Season everything with pepper, salt, and pour over the dressing.

Recipe beet and herring salad:

This delicious and simple dish requires boiled beets. Therefore, first you need to wash it and boil it until fully cooked, which will take about 45-50 minutes over medium heat.

Cool the finished beets, it’s even better to cool them in the refrigerator, then peel them and grate them on a coarse grater, since on a fine grater the beets will release a lot of juice, which will be superfluous in the salad. Peel the onion, rinse and finely chop with a knife. If desired, the onion can be doused with boiling water or sprinkled with vinegar to slightly reduce its spiciness. Mix beets with onions, add salt to taste, but keep in mind that the salad also uses herring and mayonnaise, which already contains salt.


Cut the herring fillet into cubes, preferably so that they are not very large.


Add herring to the beet salad and stir. It is desirable that the ratio of beets and herring in the salad is approximately the same, so that the taste is balanced and pleasant.


All that remains is to season the salad with low-fat mayonnaise. Black pepper and herbs are added to taste.


This salad should be served chilled. Therefore, either cool all the ingredients before cooking, or dress the chilled salad just before serving so that it does not “drip.” Serving is your choice - in portions or in a common salad bowl. Beetroot and herring salad is ready!
