There are different ways to prepare strawberries for the winter. Today we will talk about an alternative to strawberry jam, i.e. about a method when strawberries are not boiled, but ground with sugar. What is good about this kind of conservation? Of course, first of all, the fact that pureed strawberries retain more useful substances than berries that have been boiled. But you need to understand that without high-quality heat treatment, such a product can only be stored in a refrigerator or a cold cellar, and there is no guarantee that the jars will last until the end of winter and nothing will happen to them. However, there are methods that extend the shelf life and we will also consider them today. And you, as always, will have a choice of which method to choose.

Strawberries for the winter with sugar without cooking

But we will start with the classic recipe, when the jar contains only 2 traditional ingredients: strawberries and sugar. This is a plus for lovers of the classics and a minus for storage. Although sugar is a preservative, it should be stored in a cool, dark place. If you, like me, do not have enough space in the refrigerator to store the preparations there, then you can freeze the grated strawberries.

Ingredients:

  • strawberries – 1kg;
  • sugar – 2 kg.

Another way to preserve cold strawberry jam without cooking is to seal it under a sugar “cork.” The sugar will be saturated with strawberry juice and form a hard crust, which will block the access of air inside the jar, and therefore stop the development of microorganisms. But this recipe requires the use of vodka, only half a tablespoon, nevertheless, pay attention to this.

What do we need for this:

  • strawberries – 500g;
  • sugar – 750g;
  • vodka – 0.5 tbsp.

Honey is not a preservative, it is simply tasty and healthy. The berries that have not undergone heat treatment will retain more vitamins and nutrients, and we will also prepare it with honey instead of sugar.

And yet, at the end of today’s topic, let’s return to making jam. This recipe is something between cold and hot preservation methods. We will grind the strawberries, and then boil them for 5 minutes, but not in several passes, as in “”, but only 1 time. This procedure significantly increases the shelf life and allows you to store the jam even in the cupboard. Moreover, quick and short cooking does not “kill” all the benefits of summer berries. And we do not use sugar in a ratio of 2 to 1 (sugar / berry), but only 1.5 to 1.

Today, dear friends, I bring to your attention a culinary idea for making strawberries. It’s difficult to call it some kind of original recipe, but still, in order for the preparation to be stored until spring, you will have to follow the sequence of the process.

So, strawberries, ground with sugar. It is prepared without cooking, and cold storage is a must. I keep my jars in the refrigerator so that I always have this tasty treat on hand. This recipe for strawberries with sugar for the winter will require a minimum of effort and time from you, and as a reward for your efforts you will receive aromatic jam from fresh berries, which will be an excellent addition to ice cream, yogurt, and pancakes.

Ingredients:

  • 500 gr. strawberries
  • 500 gr. Sahara

Preparation:

Sterilize jars and lids in advance to ensure good storage of our preparation.

For this strawberry recipe, I chose ripe and fragrant strawberries, burgundy in color. Unfortunately, I didn’t remember the variety.

Fill the strawberries with cold water in a large bowl so that sand and dirt particles settle to the bottom.

We clean the strawberries from the stems and measure out the required amount of sugar.

Using a blender, turn strawberries into puree. If you don't have a blender, you can do this with a potato masher, or put it through a meat grinder.

Add sugar to the strawberry puree, but not all of it. You need to leave about 100 grams. sugar for filling jars.

Mix strawberry puree with sugar until completely dissolved. I used fine sugar, and it dissolved immediately, but there are sugars with large crystals, in which case you need to put the strawberry puree in the refrigerator, stirring occasionally, until the sugar is completely dissolved.

Now put the strawberries and sugar into dry, sterile jars.

Fill the jars with the remaining sugar to the top. This is done for better storage of the jars, so that the strawberries do not become moldy, and God forbid, they do not turn sour.

We close the jars with strawberries with lids and store them in the cellar or refrigerator.

  • The most delicious strawberries are picked in the morning, before dew, on sunny days. If you pick it after rain, the berries will be watery or loose, which will negatively affect the organoleptic qualities of the “cold jam” and its preservation.
  • Before cooking, you need to sort the berries well so that rotten strawberries do not spoil the preparation.
  • Strawberries mashed with sugar should be sealed not just in clean jars, but in sterilized jars. In this case, it is better to give preference to small containers - from 0.2 to 0.5 liters.
  • The lids that will be used to close the jars should be boiled for 5 minutes, regardless of what material they are made of.
  • When storing strawberries in the freezer, defrost them gradually without heating them. This will preserve vitamins.

Recipes for pureed strawberries often depend on how you plan to store them in the winter. Thus, less sugar is required for storage in the freezer.

In any case, it is impossible to store “cold jam” in a warm place, even at room temperature. If storage conditions are met, the shelf life of strawberries mashed with sugar is 6 months.

Classic recipe for strawberries pureed with sugar

  • strawberries – 1 kg;
  • granulated sugar – 1.25 kg.

Cooking method:

  • Sort through and carefully wash the strawberries. Cover the berries with a kilogram of sugar. Place in a cool place for 3 hours.
  • Mash the berries with a wooden masher or puree using an immersion blender.
  • Place in sterilized jars, leaving about 1 cm to the edge.
  • Sprinkle with remaining sugar.
  • Roll up with tin lids and put in the refrigerator.

A so-called “sugar plug” forms on the jam, which will increase its preservation. However, you can only keep strawberries with sugar prepared according to the classic recipe in the refrigerator.

Strawberries pureed with sugar and vodka

  • strawberries – 1 kg;
  • sugar – 1 kg;
  • vodka – 40-60 ml.

Cooking method:

  • Rub the sorted and washed strawberries through a sieve or chop with a blender. You can also use a meat grinder.
  • Pour sugar into the strawberry puree and mix the resulting mass well.
  • Fill the prepared jars with pureed strawberries and sugar. Pour a tablespoon of vodka into each one on top.
  • Roll up jars of strawberries with metal lids and put them away for the winter.

This preparation should be stored in the refrigerator. Vodka will prevent strawberries from souring for a long time. Thanks to this, the preparation of this dessert requires a little less sugar than when using the classic recipe. However, children should no longer be given such a delicacy.

Strawberries pureed with sugar: recipe for storage under nylon lids

  • strawberries – 1 kg;
  • granulated sugar – 2 kg.

Cooking method:

  • Sort out the strawberries, wash, let dry and wipe in any way. You can simply mash the berries thoroughly with a wooden pestle.
  • Mix the berry puree with sugar, using about 1.5 kg of granulated sugar, and leave to steep for an hour.
  • Sterilize the jars and place the strawberries pureed with sugar on them so that there is about 2 cm left to the edge of the jar.
  • Fill the strawberry jars to the top with sugar.
  • Boil plastic lids and cover jars of “cold jam” with them. Store them in the refrigerator.

This recipe produces the sweetest strawberries, since storage conditions in this case require the use of a large amount of sugar, which plays the role of a preservative.

Strawberries pureed with sugar and frozen

  • strawberries – 1 kg;
  • sugar – 0.5 kg.

Cooking method:

  • Wash, dry the selected strawberries, mash them until smooth.
  • Mix with sugar and place in clean containers.
  • Once closed, put it in the freezer for the winter.

For this preparation, it is best to use containers or small jars, since strawberries cannot be re-frozen.

Strawberries pureed with sugar like jam

  • strawberries – 2 kg;
  • sugar – 1.5 kg;
  • lemon – 1 pc.

Cooking method:

  • After sorting, washing and drying the strawberries, turn them into a homogeneous puree. This can be done by rubbing it through a sieve using a wooden masher or whipping it with a blender.
  • Mix the berry mixture with sugar and let it brew for an hour.
  • Wash, cut the lemon and squeeze the juice out of it. If there are any seeds in it, remove them.
  • Pour the juice into the strawberry puree and stir.
  • Place over low heat and simmer for 40-60 minutes until the mixture thickens.
  • Divide the jam into sterilized jars, seal them and invert.
  • Wrap the jars of strawberries in something warm until they cool completely.

Due to heat treatment, strawberries mashed with sugar according to this recipe will not be as healthy as “jam without cooking,” but they can be stored in winter at room temperature. Moreover, it will not deteriorate when stored in a cool pantry or basement.

Strawberries mashed with sugar will be even tastier and healthier if part of them (no more than half) is replaced with honeysuckle. The amount of sugar should be left the same as in the selected recipe.

When you can no longer look at strawberries, this is a sure sign that it’s time to start canning. Because summer flies by quickly, and in winter, oh, how you want to treat yourself to jam or berry jam. And therefore, in order not to become like the dragonfly from Ivan Krylov’s famous fable, let’s prepare something amazingly tasty for the winter, and most importantly, quick to prepare.
I am very impressed by the fact that it takes little time to prepare this delicacy, firstly, it is not always possible to cook it for two days, and secondly, jam prepared using this technology retains all the vitamins and minerals that strawberries are so rich in . Agree that this is a strong argument in favor of this particular recipe.
The main thing is to choose good quality berries so that they are not overripe or rotten. We will not add any chemical additives to preserve the delicacy, sugar is an excellent preservative and it is only important to maintain the proportions of berries and granulated sugar, then the five-minute jam from pureed strawberries will turn out tasty, healthy and will be stored until the new berry harvest in a cool, dry place.
It is also important to choose a container for jam - these should be glass jars, which we thoroughly rinse with warm water, soap and soda, and then sterilize over hot steam or in the oven along with the lids.
The above recipe will yield approximately 2 kg of jam.

- granulated sugar – 600-800 g.

We sort through the strawberries, if we come across spoiled ones - rotten, limp, broken, then we certainly throw them away, otherwise the jam will quickly ferment. Next, rinse the berries with warm running water to remove dirt and sand. And after that, put them on a towel to dry a little. Dry selected berries are cleaned of green sepals.
Place the strawberries in a saucepan and blend using an immersion blender or grind them in a meat grinder into a homogeneous mass.




Then add sugar at your discretion, but within the limits specified in the recipe.




Stir the mixture and leave for 4 hours until the sugar is almost dissolved.
And then we put the dishes on the stove and bring the mass until it boils. Remove the protein noise (otherwise the jam will quickly turn sour) and cook for 5 minutes over moderate heat.




While the jam is still hot, transfer it to dry, sterilized jars. Seal with lids (it is best to use jars with a twist-off system).
After the jam has cooled completely, we take it to the basement for long-term storage.






You can just as easily prepare

Strawberries are a delicacy that is available in our country only during one or two summer months. Of course, berries are sold in large supermarkets all year round, but they do not always have the taste that we are looking for. Ordinary jam cannot replace it. The best option is pureed strawberries with sugar. It’s easy to stock up on such yummy food for the winter.

Uncooked jam

Strawberries mashed with sugar, the recipe for which we will definitely describe below (and more than one), is otherwise called raw jam. This method of preparation, called cold canning, allows you to preserve the taste and aroma of fresh berries. And with such processing, much more vitamins remain than in classic jam.

Thus, all the advantages that strawberries pureed with sugar have are obvious. Without cooking, without wasting time, without significantly changing the taste and aroma, you can get an excellent winter preparation. There are only two disadvantages: the sweet can only be stored in the refrigerator, and its shelf life does not exceed six months.

Preparation

Before you cook strawberries pureed with sugar, you need to process them. Carefully sort the berries, remove the stems. Rinse the strawberries under running water using a colander, then let them dry a little. If you grind wet berries, the raw jam will quickly spoil.

The only additional ingredient is sugar or powdered sugar. If you wish, you can add other berries, for example, strawberries, to diversify the tastes. It is also not forbidden to use vanillin and other aromatic spices.

The only equipment you will need is jars, lids and containers in which the strawberries will be mixed with sugar. For grinding, each housewife can use any device convenient for her - a blender, a meat grinder or a regular pestle with a mortar, a sieve or a fork.

Mashed strawberries with sugar for the winter are prepared only from good berries. Set aside crumpled and damaged specimens and use them in another way, otherwise the workpiece will not last long in the refrigerator.

Proportions

Usually sugar and berries are taken in a 1:1 ratio, but this parameter can be varied depending on taste preferences. Those who like it sweeter should take twice as much sugar as berries. If someone likes the natural taste, you can measure just half a kilo of sugar per kilogram of strawberries.

Recipe No. 1: classic

Chop the strawberries, mix the resulting puree thoroughly, put it in a saucepan and heat to 60-65 degrees. Add sugar to the warm mass, mix everything and heat it another 70 degrees so that the sweet sand dissolves.

Pour into sterilized jars. Sprinkle a little sugar on top to form a crust - this will keep the strawberries longer. You can close the container with a nylon lid, since sterilization is not necessary.

Recipe No. 2: Strawberries for the freezer

Strawberries mashed with sugar, the recipe for which is given below, is an almost complete dessert.

The berries should be crushed so as to obtain a homogeneous mass, so it is more convenient to use a blender. Next, the strawberries are mixed with sugar, of which you need to take half as much as the berries.

The mass is poured into molds, plastic jars or containers. The container must be closed. All this beauty is placed in the freezer and stored there in the future. Instead of containers, you can use ziplock bags - this is even more practical.

Another option is to pour the sweetness into ice cube trays. After freezing, place the resulting cubes in a bag and store in the freezer. If necessary, you can always get the required number of cubes and add them to a milkshake, tea, champagne, yogurt or porridge.

Strawberries pureed with sugar live longer in the freezer than in the refrigerator, and will quietly lie there until the next harvest.

Recipe No. 3: delicious jam

For this recipe, the optimal ratio of sugar and berries is 1:1.

We wash and dry the berries, then carefully transfer them to some container (pan, bowl) and sprinkle with sugar. After this, grind the berries using a masher or blender.

Next, the tasty mixture is moved to the stove, heated and, with constant stirring, simmers for about 3-5 minutes. Then it is poured into sterilized jars, closed and, after cooling, put into the refrigerator.

Recipe No. 4: strawberries in their own juice

How to cook strawberries pureed with sugar without heating them on the stove? After all, during heat treatment, a certain amount of valuable substances is still lost, although in a smaller volume than when preparing jam. Well, you can do everything almost the same, only without heating.

We prepare the strawberries, sprinkle them with sugar and let them stand for a while so that the berries release their juice. A few hours is enough, but you can leave it overnight.

Recipe No. 5: portioned

It will turn out even tastier and better if you add sugar gradually during the grinding process.

We take a small batch of washed and dried berries, put them in a container and mash them with a masher, gradually adding sugar. Then add the next batch of berries to this mixture and mash again, adding sand. And so on until all the ingredients are added.

The future jam is infused for about fifteen minutes, and then placed in storage containers.

How to sterilize jars

Since pureed strawberries with sugar are prepared for the winter virtually without heat treatment, the optimal container for storing them is a sterilized glass jar.

Sterilization can be carried out by placing the jars in an oven preheated to 140 degrees for ten minutes. Lids should not be sent there, so as not to melt the sealing rubber. Just boil them for five minutes.

If you take small jars, you can pour a little water into them (literally to the level of 1-2 centimeters) and put them in the microwave for 3-5 minutes.

Are these strawberries healthy?

Mashed strawberries with sugar are prepared for the winter not only as a dessert, but also so that the menu during the cold period is more fortified.

Each spoon of raw jam contains vitamins A, B 1, B 2, B 5, B 6, B 9, C, E, H, PP. Microelements include calcium, magnesium, potassium, phosphorus, and fluorine. In addition, the sweetness contains many useful acids and amino acids, glucose and fructose.

The calorie content of the treat is 220 kcal per 100 grams, provided that equal amounts of sugar and berries are used.

This is how pureed strawberries with sugar are prepared easily and quickly. You can store it for the winter by placing it in the refrigerator or freezer, depending on what container is more convenient for you to use and what dishes you plan to add the berries to.
