During the cooking process, special attention should be paid to the liquid level. If the water evaporates, then it must be topped up so that the beans are completely immersed in it. Otherwise, the beans will not cook evenly.

The soaking process for beans is usually 7-8 hours, but this process can be accelerated. To do this, pour the beans with cold water, after having sorted them out and washed them. Then the container with beans and water must be put on low heat and brought to a boil. Boil the beans for no more than 5 minutes. After that, the beans must be left for three hours in the water in which they were boiled. Thanks to this technique, the soaking process will be more than halved.

The nuances of cooking beans in a multicooker:

  • the ratio of water and beans does not change when cooking in a multicooker (1: 3);
  • the beans are cooked in the "Stew" mode (first, the timer must be set for 1 hour, if the beans are not cooked during this time, then the cooking must be extended for another 20-30 minutes).

Beans take longer to cook in a double boiler than other methods. The liquid in this case is not poured into the beans, but into a separate container. Red beans are cooked in three hours, white beans are cooked about 30 minutes faster. It is important that the temperature in the steamer is 80 degrees. Otherwise, the beans may take too long to cook or they may not cook evenly.

In the microwave, the beans must be boiled in a special dish. Beforehand, the beans must be soaked in water for several hours. Beans are poured with liquid according to the traditional rule: there should be three times more water than beans. Cook beans in the microwave at maximum power. It is best to set the timer to 7 or 10 minutes first, depending on the type of beans. The first option is for the white variety, the second for the red variety.

Asparagus (or green beans) are cooked for 5-6 minutes regardless of the cooking method. 10 minutes before cooking, you can sprinkle with grated cheese mixed with green onions.

Provencal soup with herbs

An unusual and very varied in taste soup will be obtained from an abundance of vegetables and herbs:

  • Boil half a glass of white beans in 1 liter of chicken broth with the addition of a glass of water and a bunch of herbs - 4 sprigs of parsley, 2 sprigs of thyme, 1 bay leaf, a small bunch of basil.
  • Then you need to prepare 200 g of green beans, 1 tomato, carrots, onions, zucchini, 1 small fennel. You will need salt, 2-3 cloves of garlic and 125 ml of olive oil.
  • While the beans are boiling, the courgette is cut into slices, the onion into quarters, the carrots lengthwise into 4 parts and into similar slices. The green beans should be up to 2.5 cm long. The fennel is cut into thin feathers.
  • Peel and chop the tomato, put the garlic with a portion of the basil in a blender, beat and add olive oil.
  • All vegetables are added to the beans in the broth, after having delivered a bunch of herbs. Cook for 15 minutes until tender. Add salt and pepper.

Serve the dish with a prepared sauce of garlic, basil and oil!

Cooking red beans

Red varieties, as well as brown and black varieties, have a denser outer skin. Therefore, it will take longer to cook them. Such varieties are more suitable for salads, lobio, that is, for those dishes where it is important to keep the beans intact.

Because of this feature, red is almost impossible to cook without soaking. And it is better to keep it in water for a longer time - 8-10 hours. If you are afraid that fermentation will begin, hide it in the refrigerator. Ideally, the soaking water should be changed three times. The ratio of dry beans to water is 1 to 3.

After soaking, fill with fresh water and cook for 1.5-2 hours. You can only check if the beans are ready by taste - it is difficult to visually assess readiness even for the most experienced housewives. You need to try at least 3 things - sometimes a part is already cooked, and a part needs another 5-10 minutes.

By the way, stirring beans during cooking is undesirable, especially if they are intended for salad or a side dish.

Green beans

Green beans or asparagus beans are radically different from the usual ones, because they are eaten when the beans have just begun to form. Accordingly, it contains less protein, but more different vitamins.

  • cut into suitable pieces;
  • dipped in salted boiling water and boiled for 10-15 minutes;
  • thrown back in a colander and washed under running cold water.

Then the green beans can be served as a side dish. If in the future we will stew or fry it, then we reduce the cooking time by 2 times.

Asparagus is as popular frozen as it is fresh. Freezing practically does not affect the taste and useful properties, but such lovers of tender pods like me get the opportunity to enjoy their favorite foods all year round. It is even easier to prepare frozen food - we send the required amount directly from the freezer into boiling water and after 5-7 minutes from the moment of boiling, you can turn it off.

How to cook quickly

There are some secrets through which you can speed up the cooking process.

The first method is very simple - you need to add a pinch of regular soda.

The second method is more difficult, but it can reduce the time by almost 2 times! Fill the beans with cold water, 5 minutes after boiling, pour in 100 ml of ice water. And so we do until it is cooked.

Let's dwell on why soaking is so important. It is clear that this way the beans will cook faster and will be tastier. But there is another very important reason. The fact is that beans contain special substances - oligosaccharides. They seriously complicate the work of the human digestive system, and even dangerous in case of problems with the gastrointestinal tract! During soaking, oligosaccharides dissolve in water. Therefore, after soaking, beans must be boiled in fresh water.

If it was not possible to soak, then change the water a couple of times during cooking.
